Meal Prep Madness/Sunday Funday

I spent $105 shopping, $25+ of savings from not buying lunches.

This week I officially start 40 hours at my job {YAY} and one thing I know for sure… Just because like will be at work from 8:30am-6:15pm 5 days a week, doesn’t mean I’m going to be sacrificing my meal plan,  and goals for something quick, easy, and crappy for me.  Hence, today I spent prepping lunches, and freezer to crockpot bags.

It took a little bit of pinterest recipe organization and searching,  but I broke it down by having 2 crockpots going simultaneously for dinner tonight, and lunches for the work week.

Clean Eating Orange Chicken for lunches

Once that was prepped I started labeling my bags. Each had the instructions for what to do on the day of cooking.

8 bags total, 4 recipes with each of them doubled.

Then I went about the task of assembling each recipe. This was the most complicated and lengthy part of the whole experience. Thank goodness for my food processor, because I did a total of 10 pounds of sliced carrots alone.

So thankful once the last bag was completed.

All in all it took longer than I thought originally, but for that I have a solution. I will be making two less time consuming recipes next week, and two similar to the ones I did today. When I think about the amount of money I’ll be saving, this is so worth it. Not to mention the benefit to my family’s health.
